Chocolate Chip Cookies [ grain free and made with grass-fed GHEE ]
Chocolate Chip Cookies (Paleo, Grain Free, Gluten Free, Lactose and Casein Free with a Nut Free Option)
I have never been a huge cookie lover, but there are few things as comforting in this world as fresh, warm, homemade chocolate chip cookies.
I (ever so slightly) adapted this recipe from one of my favorite recipe blogs, Against All Grain. (http://againstallgrain.com/2012/08/29/real-deal-chocolate-chip-cookies/) She calls them "Real Deal Chocolate Chip Cookies" and I can see why!
Preheat oven to 350.
Mix dry ingredients first.
1 1/2 cups almond flour (I use raw almonds and blend them up in my Vitamix. Then I combine the remainder of the ingredients in the machine, but it can all be done by hand if you start with nut flour instead of whole nuts.) *I have made these using sunflower seeds instead of almonds as a "nut free" alternative and they were wonderful.*
2 T coconut flour (I use this Nutiva brand)
1/2 tsp. real sea salt
1/2 baking soda
Mix in wet ingredients:
1 large egg
1/4 cup Goddess Ghee
2 T sorghum syrup (honey or maple syrup will work as well)
After cookie dough is well mixed, stir in:
Spoon onto parchment paper (I use this one) if you are using an aluminum cookie sheet. Press them down.
Bake for 9-12 minutes in oven and let cool on a rack for 5 minutes. (9 minutes yields a chewy cookie, 12 minutes yields a crispy cookie.)
I typically have extra dough and I roll it up in parchment paper and freeze it for another day (or to eat it raw).
